When it comes the winter, a different kind of onions turn into the protagonist of Catalan Gastronomy: “Calçot”. Leaving aside the popular “Calçotades” (typical in Catalunya, when people roast straight on the flames of an ember “Calçots” and eat them with the hands and dressed of a special sauce: “Romesco”), it is a metter of a special product, with a different flavour, and for a lot of people, delightful. All qualities that are heighten especially on having combined it with a good black beer.
